Recipe - The sophisticated steak sanger
INGREDIENTS

30g butter
1 medium leek (350g), sliced thinly
2 tablespoons brown sugar
2 tablespoons red wine vinegar
4 thin scotch fillet steaks (500g) – bash 'em with a rolling pin if a little too thick
8 thick slices crusty white bread
2 tablespoons olive oil
60g rocket, trimmed – substitute lettuce if you can't be arsed finding rocket
1/3 cup (80ml) sweet chilli sauce
METHOD

1. Melt butter on heated flat plate; cook leek, stirring, until softened. Sprinkle with sugar and vinegar; cook, stirring, about 10 minutes or until leek caramelises.

2. Cook steaks on heated oiled grill plate until cooked as you like them.

3. Meanwhile, brush both sides of bread with oil; toast both sides on hot flat plate. Sandwich rocket, steaks, sauce and caramelised leek between toast slices.

Taking a leek
While you could easily substitute onions in this recipe, why not do what the Welsh do and have a good hard go with a leek. Leeks have a subtler, milder flavour than most onions, but make sure you give them a good wash after slicing them because the space between the layers of leek can get dirtier than a Fyshwick video store.
